Another one for the Crock Pot no pun intended
I tried another fantastic recipe for the crock pot. Chicken and Vegetable Chowder.
1 lb boneless, skinless chicken breast, cut into 1" pieces
14.5 oz reduced-sodium chicken broth (1 can)
10.75 oz condensed cream of potatoe soup, undiluted
1 pkg frozen (10 oz) broccoli florets, thawed
1 C sliced carrots
1 jar (4.5 oz) sliced mushrooms, drained
1/2 cup chopped onion
1/2 cup whole kernel corn
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/3 c half-and-half
Combine chicken, broth, soup, broccoli, carrots, mushrooms, onion, corn, garlic and thyme in crock-pot slower cooker, mixed well.
Cover and cook on low 5 to 6 hours
Stir in half-in-half, cover, cook on high for 15 minutes or until heated through. You can add 1/2 cup shredded Swiss or Cheddar cheese just before serving, stir over low heat until melted. YUMMY, YUMMY!
